Bendekayi /okra/ladies finger are very low calorie vegetable with no saturated fats/cholesterol. Rich source of dietary fiber and vitamins. This is one of the vegetable recommended for weight loss. Also, consuming this okra benefits the pregnant women since it has folic acid which is useful in neutral tube formation in fetus.
Here is simple way to incorporate bendekayi in our daily diet.
Ingredients:
4 cups cut okra / bendekai Wash and dry the okra completely before cutting
1/4 cup fresh/frozen coconut
¼ tsp turmeric powder
1 tsp jaggery
juice of 1/2 lemon
1 tsp salt
For seasoning:
3 TBSP oil
¼ tsp mustard seeds
4 to 5 green chillies
¼ tsp jeerige menasina pudi(optional)
few curry leaves
